How to: Easy Homemade MOCK MEAT (Vegan Seitan Recipe)

I share sooo many recipes ft. seitan (i.e. my recent full week of dinners). Here's how I actually make the seitan from scratch!
Note: I usually use different beans but it's quarantine and this is what I had in the house. Anyway, hereby a basic seitan mock meat recipes. Feel free to adapt (I never make the same type twice, and I do enjoy trying to recreate specific meats that I've tried as a kid e.g. by adding more/less saltiness or varying the spices). The sky's the limit!

Whilst it seems like effort, it's so much better than store-bought. Also, it lasts for two weeks in the fridge and ages in the freezer, just sayin'.



Vegan 'beef' recipe (large batch, about 12 servings):
  1. Blend up 1 can of cannellini beans, 1 can of lentils (1/4 block of tofu), 1 garlic clove, smoked paprika, curry spices, chicken seasoning, 1 ts mustard, 2 tbs nutritional yeast, 1 stock cube, 1 tbs miso, 1 tbs marmite, 1 tbs soy sauce, and a tiny dash of liquid smoke (optional, but especially very good if making bacon or red meats)
  2. Add the vital wheat gluten and knead. It should be like a very wet bread dough, but it should no longer stick to every single thing it touches. If it's still too sticky, add more wheat gluten.
  3. Make little poo-shaped seitans and steam in foil for about 1 hour.
  4. Fry up in sufficient oil, then add to everything you make! :-)
